Ingredients:
Jack fruit - 500 gms
Potato - 2 large ones
Onions - 2 nos
Tomatoes - 2 nos
Coriander seeds- 1 table spoon
Ginger - 1 inch
Garlic - 5 - 7 pearls
Jeera - 1 tea spoon
Red chilies - 3 nos
Cooking oil - 2 table spoons
Mustard seeds - 1 tea spoon
Sugar - 1/2 tea spoon
Turmeric powder- 1/2 tea spoon
Fresh coriander - 2 table spoons (Finely chopped)
Salt to taste
1. Peel jack off its thorny part and dice into 1 inch cubes.
2. Take it in a thick bottomed vessel, add water 1/2 cup water, salt and turmeric powder and cook till soft.
3. Peel and dice potatoes into 1 inch big cubes.
4. Finely chop onions and tomatoes.
5. Grind together 1 onion, ginger, garlic, coriander seeds, jeera and red chilies.
6. Heat oil in a kadai, add mustard seeds and once it crackles add the finely chopped onions.
7. As soon as the onions turn transparent add the ground masala and salt for the masala (remember you have added salt for the jackfruit)
8. Stir fry till the oil splits from the masala, then add the finely chopped tomatoes and turmeric powder.
9. Again stir fry till the tomatoes turn shapeless, add the chopped potatoes and cooked jackfruit.
10.Add a cup of water, cover and cook till the potatoes are done.
11.Remove from stove, garnish with chopped coriander and serve with rice/ roti or parathas.
