Vegetable Kofta curry

Ingredients:

Onions                         -  3 nos
Tomatoes                     -  2 nos
Garlic                           -  5 - 6 pearls
Ginger                          -  1 inch
Red chili powder          -  1 tea spoon
Turmeric powder          -  1/2 tea spoon
Garam masala powder  -  1/2 tea spoon
Coriander powder        -  1/2 tea spoon
Jeera powder                -  1/2 tea spoon
Salt to taste

For kofta:
Bengal gram flour(besan)- 100 gms
Bottle gourd                  -  250 gms
Carrot                           -  1 nos
Green chillies                 -  2 nos
Fresh Coriander            -  1 table spoon
Cooking oil for deep frying koftas.
Salt to taste

1.  Grate bottle gourd and carrots.
2.  Finely chop green chillies.
3.  Take the bengal gram dal in a bowl.
4.  Add the grated vegetables, green chillies, chopped coriander and salt and mix well.
5.  Need not add water.  The water in the bottle gourd is enough.
6.  Heat oil in a kadai and make small balls of the mixture and fry till golden brown.
7.  It should be cooked in low flame only.

8.  Now grind onions, tomatoes. ginger and garlic together.
9.  Take 2 table spoons in a kadai and add mustard seeds.
10.Once the mustard crackles add the ground masala and also coriander powder, jeera powder, red chili powder, salt and sugar.
11.Once the whole masala cooks and oil splits add 1 cup of water, 1/2 cup of milk and allow it to boil for 5 mins and remove from stove..
12.Add the koftas when the grave is hot.
13.Vegetable kofta curry ready.  Serve hot with rice or roti or parathas.
