Channa Baingun ki sabji

Ingredients:

Brinjals                   -  300 gms
Fresh channa          -  100 gms
Potato                    -  1 no
Onion                     -  1 no
Tomatoes               -  2 nos
Turmeric powder    -  1/2 tea spoon
Garam masala         -  1/2 tea spoon
Red chili powder     -  1 tea spoon
Cooking oil             -  1 table spoon
Mustard seeds        -  1 tea spoon
Jaggery                   -  1/2 tea spoon
Salt to taste

1.  Shell and wash the fresh channas.
2.  Cut brinjals and potatoes into 1 inch long pieces.
3.  Finely chop onions and tomatoes.
4.  Heat oil in a kadai and add mustard seeds.
5.  Once the mustard crackles add the onions.
6.  After the onions becomes transparent add the tomatoes and once it becomes shapeless and the oil splits add the diced vegetables and fresh channa.
7.  Also add the salt, jaggery, red chili powder, turmeric powder and garam masala.
8.  Add 1/2 cup of water and cover the kadai and cook in low flame till the vegetables are cooked.
9.  Remove from stove and serve with rice or roti.
