Bittergourd Masala

Ingredients:

Bittergourd             -  250 gms
Onion                     -  1 no
Tomatoes               -  2 nos
Cooking oil            -  1 table spoon
Mustard seeds       -  1 tea spoon
Black gram dal      -  1 tea spoon
Jeera powder         -  1 tea spoon
Coriander powder  -  1 tea spoon
Red chili powder    -  1 tea spoon
Turmeric powder   -  1/2 tea spoon
Gur (Jaggery)         -  1/2 tea spoon
Salt to taste

1.  Cut both the edges of the bittergourds and chop them into 1/2 inch cubes.
2.  If the bitter gourd is having hard seeds, remove it.
3.  Finely chop onions and tomatoes.
4.  Heat oil in a kadai, add mustard seeds, black gram dal and once the mustard crackles and dal turns golden brown, add the chopped onions.
5.  After the onions turn transparent add the tomatoes, salt and turmeric powder.
6.  Stir fry till the tomatoes turn soft and shapeless.
7.  Add the chopped bittergourds, jeera powder, coriander powder, red chili powder and gur.
8.  Mix well and cover the kadai and let it cook in low flame.
9.  Stir inbetween and remove from stove after the bitter gourd is done and soft.
10.Serve hot with roti or ghee rice.
