Keeraithandu Masala

Ingredients:

Keeraithandu    -  1 cup
Potatoes           -  1 nos
Onion               -  1 no
Tomatoes         -  1 nos
Mustard seeds  -  1 tea spoon
Black gram dal  -  1 tea spoon
Garam masala   -  1 tea spoon
Jeera powder    -  1/2 tea spoon
Red chili powder-  1/2 tea spoon
Bental gram flour-  1 tea spoon(optional)
Salt to taste

1.  Clean the keeraithandu (green stems) and cut them into 1/2 inch long pieces.
2.  Finely chop onions and tomatoes.
3.  Peel and cut potatoes into 1/2 inch cubes.
4.  Heat oil in a kadai and add the mustards and black gram dal.
5.  Once the mustards crackles and dal turn golden brown add the onions.
6.  After the onions turn transparent add the tomatoes and as soon as they become soft and shapeless add the diced potatoes and green stems.
7.  Add salt, turmeric powder, garam masala powder and red chili powder.
8.  Stir cook for 2 - 3 mins and then add a cup of water and let it cook for 5 - 7 mins.
9.  Keep stirring in between and remove from stove after the green stems are soft and the water is dried.
10.If there is still water in the sabji add little bit of gram flour and mix well.
11.Serve hot with roti/ rice.
