Tinda Fry

Ingredients:

Tinda                    -  250 gms
Mustard seeds      -  1 tea spoon
Black gram dal      -  1 tea spoon
Curry powder       -  1 table spoon
Cooking oil           -  1 table spoon
Asafoitida             -  1/2 tea spoon
Turmeric powder  -  1/2 tea spoon
Salt to taste

1.  Wash and cut tindas into long thin pieces.
2.  Heat oil in a kadai and add mustard seeds and black gram dal.
3.  Once the mustard crackles and dal becomes golden brown add the cut tindas.
4.  Add salt, turmeric powder and asafoitida, mix well, reduce flame and cover with a lid.
5.  Keep stirring in between and allow it to cook for 10 mins.
6.  Now add the curry powder and mix well and cook till the vegetable is soft and done.
7.  Serve with rice/ roti or paratha.
