Ingredients:
Potatoes - 3 - 4 nos
Onions - 2 nos
Tomatoes - 1 no
Ginger - 1 inch long
Garlic - 5 -6 pearls
Coriander powder - 1/2 tea spoon
Jeera powder - 1/2 tea spoon
Red chili powder - 1/2 tea spoon
Turmeric powder - 1/2 tea spoon
Sugar - 1/2 tea spoon
Cooking oil - 2 table spoons
Mustard seeds - 1 tea spoon
Fresh coriander - 1 table spoon
Salt to taste
1. Boil potatoes peel and keep it aside.
2. Grind together 1 onion, ginger and garlic into a soft paste without adding water.
3. Finely chop 1 onion and 1 tomato.
4. Heat oil in a kadai and add 1/2 tea spoon of sugar to it and wait for it to become dark red and then add the mustards.
5. After the mustard crackles add the chopped onions.
6. Stir till the onions becomes transparent, then add the ground paste, finely chopped coriander, turmeric powder, coriander powder, jeera powder and red chili powder.
7. Keep stirring till oil splits and then add the chopped tomatoes.
8. Let the tomatoes become soft and shapeless and then add a cup of water.
9. As soon as the mixture starts to boil add the potatoes (cut into 1 inch cubes).
10.Let the subji boil and mix well and water evaporate.
11.Alu subji is ready. Serve with rice or roti or parathas.
