Ingredients:
Soya chunks - 20 - 25 nos
Potatoes - 4 nos
Onions - 2 nos
Tomatoes - 1 nos
Ginger - 1 inch
Garlic - 4 - 5 pearls
Coriander seeds - 1 tea spoon
Jeera - 1 tea spoon
Red chillies - 3 nos
Turmeric powder - 1/2 tea spoon
Cooking oil - 3 table spoons
Mustard seeds - 1 tea spoon
Black gram dal - 1 tea spoon
Sugar - 1 tea spoon
Coriander leaves - 1 table spoon(chopped)
Salt to taste
1. Take the soya chunks in a wide bowl and add boiling water to it and keep it aside for 1/2 hr.
2. The chunks will absorb the water, become soft and big.
3. Squeeze the chunks and through away the water and add some more hot water and repeat the process once again.
4. Boil the potatoes, peel and dice it.
5. Take 1 onion, ginger, garlic, coriander seeds, jeera and red chillies into a mixer and grind it coarsely without adding water.
6. Finely chop 1 onion and tomato.
7. Heat 2 table spoons of oil in a kadai and shallow fry the squeezed soya chunks till they grow golden brown.
8. Remove it and keep it aside. Add the balance oil, add the sugar, mustard seeds and black gram dal.
9. After the mustard crackles add the chopped onions till it turns transparent and then add the ground masala paste.
10.Also add the turmeric powder and salt.
11.Keep stirring till the oil splits and then add the diced potatoes along with 1 cup of water.
12.After it boils for 5 mins add the fried soya chunks and allow it to boil for 2 - 3 min.
13.Garnish with chopped coriander leaves.
14.Serve hot with rice or roti.
