Bharva Baingun

Ingredients:


Bharva Baingun

Little bainguns    -  250 gms
Onion                  -  1 nos
Tomatoes             -  3 nos
Green chilies       -  3 - 4 nos
Garlic                  -  6 - 8 pearls
Groundnuts         -  2 table spoons
Til (Sesame)       -  1 table spoon
Cinnamon stick   -  1/2 inch
Coriander seeds  -  1 table spoon
Jeera                    -  1 tea spoon
Red chilies          -  4 - 6 nos
Gur (Jaggery)      -  1 tea spoon
Fresh cream        -  2 table spoons
Fresh coriander  -  2 table spoons
Cooking oil         -  4 table spoons
Salt to taste

1.  Dry roast groundnuts, sesame, cinnamom stick, coriander seeds, jeera and red chilies.
2.  Add garlic and salt to the roasted ingredients and make it into a powder.
3.  Wash and slit the brinjals, vertically and horizontally(like plus sign) without cutting the stem.
4.  Carefully stuff the brinjals with masala powder.
5.  Heat 2 table spoons of oil in a kadai and add the brinjals and cook then in low flame till they are soft.
6.  It can be cooked in microwave also.  Arrange the brinjals in a microwave proof plate and cook for 10 mins, turning the brinjals every 3 mins.
7.  Grate the onions in the cheese grater, and finely chop the tomatoes and green chilies.
8.   Heat the balance oil in a kadai and add the mustard seeds.
9.  Once it crackles add the grated onions, stir cook till it becomes transparent and then add the green chilies and tomatoes.
10.Stir cook till it becomes shapeless.  Now use a potato masher and mash the tomato mixture.
11.Add salt, jaggery and cream and allow the mixture to to boil for a few mins.  Now add the brinjals and water if necessary and boil for a few mins.
12.Remove from stove and garnish with finely chopped coriander leaves.
13.Serve hot with rice or roti or paratha.
